One word -- rust!
While stainless steel is not rustproof, it is much, much more rust resistant than blued. The Walther PPK/S that I carried for years IWB required only an occasional (weekly or bi-weekly) wipe-down with a cloth moistened in Break-Free to keep it looking good. My blued RIA 1911CSP would rust after a day of carrying unless it was stripped including removing the grips, and wiped down nightly. The same for a blued S&W 36 I sometimes carried.
Now, with newer, smaller 9mm pistols available I very, very seldom carry that PPK/S anymore. It's been replaced by polymer-framed pistols with Tennifer or Melonite finishes on metal parts. That RIA 1911CSP has been Duracoated so rust is no longer an issue. But for natural steel finishes, stainless beats the heck out of blued carbon steel.
