I'm pretty "pro-cop" but I dislike random stops and checkpoints. However, driving is a priviledge granted by the state and it's the state's/city's right to monitor their streets as they see fit. It's also the driver's right not to answer any questions. And it's nice to see LEOs who know the boundries of the law.
His engaging in a brief conversation probably told the cops all they needed to know (no slurring or incoherent babbling) but it would have been interesting if he had chosen not to speak at all. I wonder what the LEOs would have done in that case.

Very well behaved on both sides from what I saw in the video... The stop itself was NOT lawful though....

The stop was lawful. SCOTUS has upheld random checkpoints and stops that are not discriminatory in nature based on prohibited classes (such as race, sex, etc.) but follow a non-biased pattern. For example, if you stop every car, every other, every third, etc. it is legal according to SCOTUS.
The fifth amendment also does not hold for alcohol related driving offenses since a drivers license is deemed a privilege and not a right and as part of the privilege, you agree to provide evidence against yourself or face penalty. This is why there are penalties for not taking (or providing evidence against yourself) an alcohol test when stopped for suspicion of DUI.
Unfortunately, there is nowhere left to argue these points as they've been handled by SCOTUS already.
