Thanks for the offer. I consider my reading comprehension to be adequate enough, so carry on at your normal speed. Even with the New York accent, I can keep up.
Another daily favorite of mine is "I'd rather be judged by twelve, than carried by six." It sounds so macho, but not as clever as your cliche'.
To the OP, carry however you like. Avoid the off-limits areas on the links posted (alcohol serving, govt. property, paid admission, etc.) and all should be fine.

Open carry is legal in NC. If in the car it needs to be in plain sight (like on the dashboard or passenger seat). You do have an obligation to inform an officer during a stop. If carrying concealed accidential exposure might get you into an awkward situation but not jail, there is no law against printing or such exposure in NC (otherwise OC could obviously never be legal).

Personally I find having guns laying around on the passenger seat a fairly dumb idea (guess what will happen to them should yo have to slam the brakes) and hardly safe so I get me a concealed carry permit as fast as I could.

Thank you all for the info. Turns out my trip got canceled due to weather. The night before we where to leave 4-6" of snow fell and winds of 20-30 MPH so not safe to drive.

I think I will carry like I always do. I don't plan on going to any town bigger then 10,000 and 95% of time will be in the country.
