    Someone shared this in a thread earlier. He said there are 600 venison recipes. I didn't verify, but the recipes I looked at made me hungry.

    I did this and it went over WONDERFULLY!

    If you have a roast just make it like you would a normal stew and add a little wine to the recipe to cut the tannin in the venison and it tastes just like beef stew.

    First I scrub the carcass out hanging from a tree in the cold with a mixture of water and vinegar. That removes lots of the wild taste that so many don't like and also kinda cures the meat too.

    I marinate the heck out of whatever part I'm gonna cook(smoke) usually in a butter and garlic marinade in the fridge for several days, rub it down totally and generously with brisket rub, using that marinade to baste it with as it cooks(smokes).

    I smoke it a around 275 degrees constantly at 20 minutes/lb. 'Havent had a complaint yet
